Was Mr. Bittman Eavesdropping on Our Speeches?

My lovely wife sent me this link to Mark Bittman's New York Times editorial about the way we treat farm animals. Two interesting notes: Mr. Bittman establishes his ethos, in part, by alluding to Peter Singer, who has an essay entitled "Animal Liberation" in our 50 Essays anthology. Also, to my knowledge, Bittman is not a vegetarian, so I don't think this is an argument about what we should eat.

Reading and responding to this article - either in your head or in writing - in a Defend, Qualify, or Challenge fashion would be excellent practice for your brains. I'd be most interested to read your comments, if you have the time or energy.
